1. Master the harvest period
All kinds of mushroom ears are basically mature in seven or eight years, with beautiful appearance and good taste. Take shiitake mushrooms as an example: it is a sign of seven or eight mature, that is, the bacterial membrane has been broken, the cap has not been fully developed, and there is still a little involution, forming a "gong edge". When the gills have all elongated and turned from white to yellowish brown or dark brown, it is a suitable harvesting period for shiitake mushrooms. Seasonally harvested shiitake mushrooms.
2. Pay attention to picking technology
When picking edible fungi, all mushrooms with stalks, such as shiitake mushrooms, mushrooms, straw mushrooms, etc., must be harvested according to the principle of picking the big and keeping the small. When picking mushrooms, pinch the base of the mushroom handle with your thumb and forefinger, rotate left and right first, and then pull it up gently. Be careful not to hurt the little mushroom. For colloidal fungi, such as white fungus, black fungus, and clustered oyster mushrooms, phoenix tail mushrooms, enoki mushrooms, etc., use a sharp knife to cut off the whole flower from the base when harvesting, and pay attention to keeping the shape of the flower intact.
3. Choose the right weather
Harvesting on sunny days is good for processing, while rainy days have high water content and are difficult to dry, which affects the quality. However, if the fungus ears are mature, they should be harvested in a timely manner in rainy days, but they should be processed as soon as possible. For black fungus, white fungus, etc., stop water spraying, increase ventilation, and harvest when the weather is fine.
4. Use suitable containers
Picked fresh mushrooms should be packed in small baskets or baskets, and should be spun gently to keep the fruiting body intact and prevent mutual extrusion and damage. In particular, it is not suitable to use sacks, wooden barrels, wooden boxes and other containers, so as not to cause appearance damage or mildew. The picked fresh mushrooms should be packaged according to the size of the mushroom body and the shape of the flower for processing.
5. Stop water and control humidity before harvesting
If water is sprayed before harvesting, the water content of the mushroom body is high, and the gills will turn black when dehydrated and dried during processing, and the product does not meet the export requirements; if it is sold fresh, excessive moisture will also cause mold and rot, so stop spraying before harvesting Water to keep the mushroom body hydrated.
